Dark Cherry Balsamic Vinaigrette

Ingredients
- 1⁄2 cup balsamic vinegar
- 1⁄4 cup granulated sugar
- 1 garlic, cloved minced
- 1⁄2 cup cherry preserves
- 1⁄4 cup red wine vinegar
- 1 cup canola oil
- kosher salt
- pepper
Directions
- In a medium saucepan on medium high heat add vinegar, sugar and garlic till boiling then simmer till reduced by half. Add preserves and cook 1 minute. Remove from heat and cool to room temperature. Whisk in red wine vinegar and then canola oil. Season with salt & pepper.
