Dahoomi's Favorite Blueberry Muffins

My husband's favorite muffins. I got the recipe off the internet about a year ago. I added rosewater, it gives the muffins a nice flavor. These freeze very well. Show more

  1. Preheat oven to 350°F.
  2. Spray the muffin tins with non-stick cooking spray.
  3. In a large bowl, combine sugar and shortening.
  4. Add eggs, mix well.
  5. In another bowl, combine flour, salt, baking powder, cinnamon and nutmeg.
  6. In a small bowl, combine milk, vanilla, and rosewater, if using.
  7. Add 1/3 the flour to the shortening mixture and mix until well combined, then add 1/3 the milk mixture and mix again.
  8. Repeat twice.
  9. Finally, add the blueberries.
  10. Pour into muffin tins.
  11. Bake for 25-30 minutes.
