Curry in a Hurry

Ingredients
- 1 diced onion
- 3 minced garlic cloves
- 2 tablespoons olive oil
- 1 (32 ounce) jar spaghetti sauce
- 1 cup water
- 2 (15 ounce) cans chickpeas
- 1 (8 ounce) bag frozen peas
- 2 tablespoons curry powder
- 1 tablespoon ginger powder
- 6 cups cooked brown rice
Directions
- Sautee Onions and Garlic in Olive Oil. 5 minutes.
- Add Curry Powder and Ginger Powder and sautee for 2 minutes.
- Add Tomato Sauce, Water, and Chickpeas.
- Simmer for 20 minutes.
- Add Peas.
- Cook for 5 minutes.
- Serve with Brown Rice.
