Curry Cauliflower & Beans Soup

Ingredients
- 1 large red onion, chopped
- 1 tablespoon olive oil
- 1⁄2 head cauliflower, in florets
- 32 ounces chicken stock
- 1 tablespoon curry powder
- 1⁄2 teaspoon salt
- 1 (15 1/2ounce) can garbanzo beans
- French-fried onions (in can)
Directions
- A dd onion and oil to stockpot on medium. Cook, stirring occasionally 10-12 min until onion begins to brown.
- Add cauliflower and stock to pot, cover. Increase heat to medium-high. Bring to a boil. Reduce heat to simmer. Cook 20-25 min until veggies are soft.
- Add curry powder, salt, and beans. Remove pot from heat. Puree soup carefully with hand blender until smooth. Heat on low 4-5 minute Portion into bowls and top with fried onion pieces.
