Curry Cauliflower & Beans Soup

This is from my local store, Wegmans. They were sampling this the other day and it was to die for!

  1. A dd onion and oil to stockpot on medium. Cook, stirring occasionally 10-12 min until onion begins to brown.
  2. Add cauliflower and stock to pot, cover. Increase heat to medium-high. Bring to a boil. Reduce heat to simmer. Cook 20-25 min until veggies are soft.
  3. Add curry powder, salt, and beans. Remove pot from heat. Puree soup carefully with hand blender until smooth. Heat on low 4-5 minute Portion into bowls and top with fried onion pieces.
