Curried Shrimp With Tomatoes & Spinach

Ingredients
- 100 g shrimp
- 1⁄2 cup vegetable broth or 1⁄2 cup water
- 2 tomatoes, chopped
- 1 tablespoon minced onion
- 1 garlic clove, crushed and minced
- 2 cups fresh spinach
- 1⁄8 teaspoon curry (to taste)
- 1⁄8 teaspoon onion powder
- 1⁄8 teaspoon garlic powder
- 1 pinch allspice
- 1 pinch stevia (to taste)
Directions
- Sauté the shrimp with the onion, tomatoes and garlic for about 3 minutes or until.
- cooked. Add vegetable broth, curry and stevia. Add garlic and onion.
- powder & allspice to thicken the mixture. Cook for 5-10 minutes on medium heat.
- Add water or reduce liquid until desired consistency is reached. Add spinach cook for a minute and serve.
- Makes 1 serving (1 protein, 1 vegetable).
