Curried Shrimp With Dried Tomatoes

Ingredients
- 2 lbs medium shrimp, precooked
- 1 head garlic, chopped
- 4 green onions, sliced
- 3 teaspoons curry powder
- 1 cup heavy cream
- 1 cup white wine
- 4 tablespoons butter
- 1 cup raisins
- 8 ounces sun-dried tomatoes
- 1 cup brown rice
Directions
- Start the rice early enough to finish with the curried shrimp.
- In a LARGE skillet, melt the butter over medium heat.
- Saute garlic, green onions, and curry powder for 5 minutes.
- Add heavy cream, wine, sun dried tomatoes, and raisins. Simmer for 20 minutes.
- Add shrimp and simmer for 5-7 minutes until warm.
- Serve in bowls over rice.
