Curried Rice

Ingredients
- 1 tablespoon cooking oil
- 1 cup minced onion
- 1 cup chopped green pepper
- 1⁄2 cup currants
- 2 cups uncooked rice
- 1 teaspoon salt
- 1⁄2 teaspoon pepper
- 1⁄2 teaspoon curry powder
- 1 quart chicken broth
Directions
- Heat oil in a wok; stir in onion, green pepper and currants, stirring until tender (about 10 minutes). Stir in rice and seasonings; brown slightly. Pour broth over rice and mix well. Bring to a boil, cover, simmer 20-25 minutes or until rice is tender.
