  1. In a large skillet, heat oil until hot.
  2. Add pork cubes and brown over high heat; remove to a warm dish.
  3. Adding more oil if necessary, cook the onions and pepper until just softened.
  4. Add in the curry powder and fresh garlic; cook for 1-2 more minutes.
  5. Add in the crushed tomatoes with their juice, and the tomato paste.
  6. Stir in the broth and vinegar.
  7. Add in the bay leaf, salt and pepper; bring to a boil, reduce heat, simmer for 1-1/2 hours.
  8. Whe the meat is tender and cooked through, remove bay leaf, and add a few drops of Tabasco sauce (or more if desired).
  9. Serve and enjoy!
