Curried Peanut Rice

I collected recipes for a number of years, but failed to write down the source of this one.

  1. In a 2 quart saucepan over medium heat, in hot oil, cook rice and green onion with curry powder until rice is browned.
  2. Add broth, heat to boiling, reduce heat to low.
  3. Cover; simmer 20 minutes.
  4. Add peas and peanuts.
  5. Cook 5 minutes more.
