Curried Lentil Soup

Ingredients
- 1 large onion, diced
- 1 large carrot, diced
- 2 small zucchini, diced
- 2 tablespoons curry powder
- 1 tablespoon crushed garlic
- 800 g crushed tomatoes
- 800 ml water
- 1 tablespoon oil, to fry veg in
- 1 cup lentils, rinsed
Directions
- heat oil.
- brown onions,
- add curry and garlic.
- now add other vegs, and lightly fry till all softened.
- tip tomatoes in, (being careful not to splash all over yourself).
- now, the lentils.
- next, the water.
- simmer for about an hour,.
- stirring now and then so the vegs dont stick to the base.
