Curried Chicken

Ingredients
- 1 frying chicken, cut up
- salt
- 2 tablespoons butter
- 1 onion, chopped
- 1 garlic clove, minced
- 2 teaspoons curry powder
- 1⁄4 teaspoon ground ginger
- 1 tablespoon tomato paste
- 1 cup chicken broth
- 1 teaspoon cornstarch
- 1⁄4 cup water
Directions
- Season chicken and fry in butter. Remove and set aside.
- Fry onion and garlic.
- Add curry powder, ground ginger, and tomato paste. Return chicken.
- Add Chicken broth, cover and simmer.
- Mix cornstarch and water, add to pan to thicken.
- Serve over rice.
