Curried Carrot Coconut Soup

Ingredients
- 6 fresh carrots
- 4 stalks celery
- 1 large onion
- 1 teaspoon fresh ginger
- 1 teaspoon garlic
- 12 cups chicken broth
- 2 teaspoons curry powder
- 14 ounces coconut milk
Directions
- Peel and chop carrots in medallions, and celery and onions in small pieces. Grate ginger and and crush garlic, stir curry power in chicken broth add vegetabkes and simmer until vegetables are cooked well. Puree in blender or with hand immersion blender. Return to pot and stir in coconut milk until blended well with vegetable mixture.
