Curly Maple's Applesauce Muffins

Adapted from Taste of Home. I don't know who Curly Maple is , but she makes some great muffins! These tender muffins with their wholesome, old-fashioned flavor are delicious! I substitute freshly ground whole grain flour for the all- purpose. **PLEASE NOTE**. If you substitute store-bought wheat flour for the all-purpose, you do not need to add the additional amount of flour - just use the same amount as all-purpose. Show more

Directions

  1. In a mixing bowl, cream sugar and butter. Add eggs, one at a time, beating well after each addition.
  2. Combine dry ingredients; add to the creamed mixture alternately with applesauce.
  3. Mix just until combined.
  4. Fill greased or paper-lined muffin cups two-thirds full.
  5. Bake at 350°F for 20-25 minutes.
  6. Cool on a wire rack.
  7. Yield: 1-1/2 dozen.
