Cupboard Enchilada Sauce

From Crescent Dragonwagon's Passionate Vegetarian. I am posting this to go with CD's Famed Tofu-Broccoli Enchiladas.

• Yields: 3 cups

Ingredients

• 1⁄2 onion
• 1 (14 ounce) can  whole tomatoes with juice
• 3  garlic cloves
• 3 -4  tablespoons  commercial hot salsa
• 1  roasted red pepper
• 1  teaspoon salt

Directions

1. Combine all ingredients in a food processor and buzz until smooth.
