Cucumber-Yogurt Dip for Vegetables

Ingredients
- 2 cups plain Greek yogurt
- 1 tablespoon lemon juice
- 1⁄2 cup olive oil
- 1⁄2 garlic clove (finely chopped)
- 1⁄2 cucumber (peeled, seeded and chopped)
- 1⁄2 small onion (finely chopped)
- salt, to taste
Directions
- In a bowl, whisk the yogurt, lemon jucie, olive oil, garlic and salt.
- Stir in the cucumber and onion.
- Cover and chill for at least 1 hour.
- Serve with raw vegetables or crackers.
