Cucumber With Dill Dressing

I experimented one day and came up with this. Hubby said, "Yes!" and I liked it too. Now it is a regular at our summer table. Feel free to vary ingredients to your families preferences.

• Serves: 2-4

Ingredients

• 1  cucumber, burpless type
• 1  tablespoon mayonnaise
• 1  teaspoon cider vinegar or 1  teaspoon lemon juice
•  salt
•  fresh ground pepper
• 1⁄2 teaspoon dill

Directions

1. Wash and slice cucumber in 1/8 inch slices.
2. Blend dressing ingredients until smooth. Using dill flakes, not seeds.
3. Add sliced cucumber and toss until well coated.
4. This is good right away but improves with a chill in the frig. Enjoy!
