Cucumber Vinegar

Recipe posted by request. Original from "The Rodale Food Center". Makes a great dressing base.

Yields: 1 quart

Directions

  1. Wash, slice but do not peel the cucumbers.
  2. Place in a clean crock, stainless or enamel pot.
  3. Add the peppercorns and sliced cukes in layers.
  4. Bring the vinegar to a boil.
  5. Pour over the cukes.
  6. Cover and steep for 3 weeks in a cool place.
  7. Strain through clean cheesecloth into another sterile container.
  8. Let stand 6 hours to settle.
  9. Ladle off the clear vinegar into sterile containers.
  10. Seal.
