Cucumber Sour Cream Congealed Salad

Ingredients
- 3 ounces lemon Jell-O gelatin
- 1⁄2 cup hot water
- 1 cup sour cream
- 3⁄4 teaspoon salt
- 2 tablespoons lemon juice
- 1 cup cucumber, minced
Directions
- Dissolve jello in hot water. Add sour cream and mix thoroughly with an electric mixer.
- Add salt, lemon juice and cucumber. Place in a 9 x 9 pyrex dish and chill until firm.
