Cucumber Salad

Ingredients
- 4 medium cucumbers, seeded and diced
- 2 tablespoons green onions, sliced
- 2 tablespoons brown sugar
- 1⁄2 cup rice vinegar
- 3 tablespoons soy sauce
- 2 teaspoons finely chopped peanuts
- 1⁄4 teaspoon crushed red pepper flakes
Directions
- In lg bowl, combine the first 5 ingredients.
- Mix well and chill for 15 minutes.
- Add peanuts and red pepper flakes.
- Toss well.
