Cucumber Couscous Salad

Ingredients

  • 1  lb  prepared seitan or 1  lb quorn pieces, brand chick'n tenders
  • 1  large cucumber, peeled and diced
  • 1  cup  chopped spearmint, leaves
  • 1 12 cups  cooked couscous

Directions

  1. Mix ingredients together lightly.
  2. Refrigerate until chilled.
  3. If desired, serve in a tomato shell on a lettuce leaf and garnish with mint sprigs.
