Cucumber Cheese Ring

This jelly salad recipe was made by my grandmother for all our family gatherings and was always a huge hit. We don't even know where the recipe came from, we only had the ingredients written down.

Ingredients

• 1 (3 ounce) package  green Jell-O
• 2 (3 ounce) packages cream cheese
• 1  cup mayonnaise
• 1  teaspoon salt
• 2  tablespoons lemon juice
• 1  teaspoon horseradish
• 1  cup cucumber (shredded)
• 1⁄4 cup  diced onion

Directions

1. Mix jell-o as per directions. I usually add a bit less water than called for as the cucumber has lots of excess water. Allow jell-o to cool slightly.
2. Mix together softened cream cheese and mayonnaise. Add remaining ingredients but mix together with jell-o mixture last adding jell-o slowly so as not to clump.
3. Pour mixture into jell-o mold and allow to set for 8 hours or over night.
