Cucumber Bell Pepper and Jicama Salad

Ingredients
- 2 cups jicama, julienned
- 2 cups cabbage, shredded
- 1 1⁄2 cups cucumbers, julienned
- 1 cup red onion, thinly sliced
- 1 cup red bell pepper, julienned
- 1 tablespoon fresh cilantro, finely minced
- 1⁄4 cup lime juice (2 limes)
- 2 tablespoons olive oil
- 1⁄8 teaspoon salt
- 1⁄8 teaspoon pepper
Directions
- Combine all vegetables and cilantro.
- In a small bowl, whisk together lime juice, olive oil, salt and pepper. Toss with vegetables. Serve chilled.
