Cucumber-Avocado Soup

Ingredients
- 2 cucumbers, peeled, seeded & chopped
- 1 avocado, peeled, seeded & chopped
- 1⁄4 cup sour cream
- 1 cup chicken broth
- 1 small onion, chopped
- 1 teaspoon dried dill
- 1 tablespoon lemon juice (or more to taste)
- 1⁄2 teaspoon salt (or to taste)
- 1⁄2 teaspoon pepper (or to taste)
Directions
- Put all ingredients in a blender or food processor and puree, or put in a souffle dish & puree with a hand blender. (If you let the food processor chop the veggies, this is almost instant soup.).
