Cucumber and Tomato Salad

Ingredients
- 2 kirby cucumbers, peeled
- 1 large plum tomato
- 1 tablespoon lemon juice
- 1 tablespoon olive oil
- 1 garlic clove, pressed
- 1⁄4 small red onion
- 1 tablespoon fresh parsley, chopped
- 1⁄4 teaspoon dried dill
- salt and pepper
Directions
- Finely chop the vegetables.
- Lightly mix with the remaining ingredients.
- Refrigerate for 2 – 4 hours and adjust salt and pepper to taste.
