Cube Steak With Gravy and Potatoes (Ww)

Ingredients

  • 1  lb potato, peeled and cut into chunks
  • 12 teaspoon salt
  • 12 teaspoon pepper
  • 4  tablespoons flour
  • 1 12 cups beef broth
  • 4 (1/4lb)  cube steak
  • 1 (8 ounce) package mushrooms, sliced

Directions

  1. In a pot bring water and potatoes to a boil; cover and simmer 10 minutes or until tender. Drain, reserving 1/2 cup liquid. Return potatoes to pan and add 1/4 tsp salt. Mash potatoes using 1/3 - 1/2 cup of the potato liquid.
  2. In a measuring cup mix together broth and 2 tablespoons flour.
  3. Coat steaks with remaining flour (2 TB), 1/4 tsp salt and the pepper.
  4. Spray skillet with Pam and set over high heat. Add steaks and cook 2 minutes per side.
  5. Stir in mushrooms and broth mixture; bring to a boil. Cover and simmer 20-30 minutes. Uncover and cook until gravy thickens.
  6. Serve with mashed potatoes.
