Cuban Black Bean Soup (Crock Pot)

Ingredients
- 16 ounces dried black beans, sorted, rinsed (equivalent to 1 lb or 2 1/3 cups)
- 1 cup ham, cooked and finely chopped
- 1 cup onion, chopped
- 1 cup tomatoes, chopped (1 large tomato)
- 1 cup green bell pepper, chopped (1 medium bell pepper)
- 3 garlic cloves, minced
- 3 cups beef broth
- 1 3⁄4 cups water
- 1⁄4 cup dark rum or 1⁄4 cup apple cider
- 2 tablespoons oil
- 1 1⁄2 teaspoons cumin
- 1 1⁄2 teaspoons dried oregano
Directions
- In 3 1/2 to 6-quart slow cooker, combine all ingredients; mix well.
- Cover; cook on high setting for 6 to 8 hours.
