Crystallized Flowers

Crystallized edible flowers, perfect for cake decoration.

Ingredients

  •  fresh edible flower (rose petals or violets are excellent choices)
  • 1  egg white
  • 1  teaspoon water
  •  superfine sugar

Directions

  1. Combine egg white and water and whisk until frothy.
  2. Using tweezers, dip each flower or petal in egg white mixture.
  3. Alternatively, you may brush egg white mixture on with a soft, clean paintbrush.
  4. Shake gently to remove excess egg mixture.
  5. Dip each flower or petal into a bowl of sugar.
  6. Shake off excess sugar.
  7. Place flowers or petals on a wire rack covered with paper towels.
  8. Allow crystallized flowers and petals to dry completely.
  9. Store in an airtight tin lined with waxed paper.
