Crunchy West African Cabbage Salad

  1. In a medium bowl combine cabbage, apples, cucumber and raisins.
  2. Toss to mix.
  3. In a small bowl, whisk mayonnaise, lemon juice, vinegar, salt and sugar for 1 minute.
  4. Pour over cabbage mixture and toss to coat well.
  5. Sprinkle with chopped peanuts and chill well.
