Crunchy Peaches and Cream Quinoa

Ingredients
- 1 cup water
- 1 cup 1% low-fat milk
- 1 cup quinoa, rinsed
- 1 tablespoon butter
- 1 tablespoon honey
- 1 teaspoon vanilla extract
- 1 cup frozen peach slices
- 1⁄2 teaspoon cinnamon
- 1⁄4 pecan halves, toasted
Directions
- Combine all ingredients in saucepan over medium high heat.
- Bring to a boil, then reduce to a low simmer. Cover and cook for 15 minutes.
- Remove from heat and allow to sit for an additional 15 minutes.
- Top with toasted pecans and serve.
