Crunchy Chicken Salad

Ingredients
- 5 1⁄2 cups chicken (cooked and cubed)
- 3 eggs (hardcooked and chopped)
- 1 cup celery, chopped
- 1 cup sweet pickle, cubed
- 1 cup toasted pecans, chopped
- 1 cup green seedless grape, halved
- 1 cup mayonnaise (can use light)
- 1 (8 ounce) can water chestnuts, drained and chopped
- 1 (8 ounce) can pineapple tidbits, drained and chopped
- 1⁄2 cup pimento stuffed olive, chopped
- 1 small onion, chopped (red or can use green onions)
- 1 (2 ounce) jar pimentos, drained and diced
- 1 tablespoon fresh lemon juice
Directions
- Combine all ingredients; blend well. Chill. Serve on lettuce cups or use for sandwiches.
