Crumb Coating for Fish

An easy alternative to corn meal coatings.

Yields: 6 batches

Ingredients

  • 1  cup  crushed  saltine (about 30 crackers)
  • 1  cup cornmeal
  • 2  tablespoons paprika
  • 5  teaspoons  seafood seasoning
  • 2  teaspoons salt
  • 1 -1 12 teaspoon pepper
  • Additional ingredients

  • 6  lbs sole fillets, 1 for each batch

Directions

  1. In a large resealable plastic bag, combine the first six ingredients.
  2. store in a cool dry place for up to 6 months.
  3. Makes 6 batches (2 cups total) To prepare fish: Place 1/3 cup coating in a shallow bowl; coat both sides of the fillets.
  4. Place in a greased 13-in.
  5. x 9-in.
  6. x 2-in.
  7. baking dish.
  8. Bake, uncovered, at 400 degrees for 12-15 minutes or until fish flakes with a fork.
  9. Makes 4 servings.
