  1. Place the tomatoes, cut side up, under a medium-high grill for 5 minutes. Remove from heat and keep warm.
  2. Put the croissants, cut side up, under the grill for 2 minutes. Remove from heat and keep warm.
  3. Now melt the butter in a small frying pan over a gentle heat. Season the beaten eggs with salt and pepper, and add to the pan. Cook until the eggs are just set (making sure you're stirring all the time), then remove the pan from the heat.
  4. Chop up the cooked ham and fold into the eggs. Pile on to one croissant half each, top with the other halves and serve with the grilled tomatoes alongside. Garnish with parsley sprigs.
