Crockpot Breakfast

Ingredients
- 12 medium eggs
- 1⁄2 cup milk
- 9 hash browns, potato patties
- 2 medium onions, sliced and separated into rings
- 2 medium green peppers, sliced
- 1 (8 ounce) package shredded cheese, cheddar, swiss or 1 (8 ounce) package mozzarella cheese
- 3 slices ham, chopped
Directions
- Whisk together the eggs and milk, then set aside. Grease a crock pot with oil. Place a layer of hash browns in the crock pot, add some onions, a layer of green peppers, then sprinkle some cheese on top and add a layer of ham pieces. Start all over again and layer the hash browns, onions, peppers, cheese, and ham. When done layering, pour the egg and milk mixture over everything. Place a lid on the crock pot, turn on low heat and go to bed.
