Crockpot Bacon Cheeseburger and Potato Soup #SP5

Official Contest Entry: Simply Potatoes 5Fix. I got this recipe when I went to a scrapbooking event. We were staying in a hotel room with a small kitchenette, and the group that I went with didn't want to spend a ton of money on eating out for every meal. Serves: 8-10

Yields: 1 crockpot

Ingredients

  • 2  lbs  cooked ground beef
  • 12 lb bacon
  • 48  ounces chicken broth or 48  ounces  chicken stock
  • 2  lbs Velveeta cheese, loaf
  • 3 (20 ounce) packages  Simply Potatoes (any flavor or cut)

Directions

  1. Chop the bacon into small pieces. Cook the ground beef and bacon together in a pan. Drain excess fat. Place the ground beef into the bottom of a slow cooker. Cover with the bags of Simply Potatoes. Slice the Velveeta into 1/2 in slices and completely cover the potatoes. Pour the chicken broth or chicken stock over the entire dish. Cook on high for about 4 1/2 hours. Stir and let cook for about 1/2 and hour to 1 hour more. Serve and enjoy!
