Crock Pot Russian Cabbage Soup

Ingredients
- 6 cups beef broth
- 1 onion, chopped
- 1 lb beef stew meat, in small chunks
- 1 (15 ounce) can diced tomatoes, undrained
- 4 cups red cabbage, chopped
- 2 cups sauerkraut, undrained
- 3⁄4 cup sugar
- 1⁄2 cup lemon juice
- 1⁄4 cup tomato sauce
- 1⁄4 cup ketchup
- 1⁄2 cup carrot, chopped (optional)
- 1⁄2 cup celery, chopped (optional)
- salt and pepper, to taste
Directions
- Put meat and onion in crock pot and cover with beef broth and tomatoes.
- Cook on low for three hours.
- Add the rest of the ingredients.
- Cook on low for three hours.
- Add salt and pepper as needed.
