Crock Pot Lima Beans and Corn

  1. Rinse beans in cold water and drain.
  2. Soak beans in water overnight.
  3. Drain water and place into a greased crock pot.
  4. Add enough water to just cover beans.
  5. Add ham hock, then celery, carrot, green pepper, corn, onion, pepper, and garlic.
  6. Cover and cook on low 8-10 hours.
  7. Remove bones and fat.
