Crock Pot Lentil & Ham Soup

Serves: 6-8
Ingredients
- 1 (24 ounce) bag lentils, rinsed and inspected for stones
- 6 cups chicken broth
- 1 1⁄2 cups ham, e.g. cubed or sliced
- 3 roma tomatoes, cut into large cubes
- 1 small onion, diced
- 2 bay leaves
- 1⁄2 teaspoon garlic
- 1⁄4 teaspoon thyme
- salt & pepper
- 1 cup white rice, uncooked
- 1⁄4 cup green onion, thinly sliced
- sour cream
Directions
- Put all ingredients except green onion and sour cream into the crock pot Cook on low 7 hours.
- Come home, dish into bowls and top with sour cream and green onions if desired.
