Crispy-Topped Cod

Ingredients
- 4 cod fish fillets
- salt
- pepper
- 2 tablespoons mayonnaise
- 1 lemon
- 4 tablespoons dill
- 4 tablespoons chives
- cucumber
- lemon
Directions
- Preheat the oven to 200C/Gas 6. Put the cod fillets on a board, season well, then place in a non-stick roasting tin.
- Mix together the mayonnaise, lemon juice, zest, and chopped herbs, then spread over the top of the fillets. Place in the oven for 20-25 minutes, or until the fish is cooked through. Serve with the shredded cucumber salad and lemon wedges.
