Crispy Quinoa Cookies

No wheat, no egg, high protein cookies. Yum!

Yields: 36 cookies

Ingredients

  • 12 cup honey (or artificial honey or honey substitute)
  • 13 cup stevia (or brown sugar substitute)
  • 12 cup peanut butter (or nut butter)
  • 12 cup applesauce (unsweetened)
  • 12 teaspoon vanilla
  • 1  cup  quinoa flour
  • 34 cup quinoa (flakes)
  • 1  teaspoon baking soda
  • 18 teaspoon salt
  • 12 cup walnuts (or other nuts) (optional)
  • 12 cup raisins (optional)
  • 18 teaspoon cinnamon

Directions

  1. Heat oven to 350 degrees.
  2. Beat together sugar, honey, applesauce, vanilla, peanut butter.
  3. In separate bowl, mix the dry ingredients and mix them into the honey mixture. Once mixed, add the optional nuts or raisins.
  4. Drop by teaspoons ful onto ungreased cookie sheet, spacing about 2" apart.
  5. Bake 12-15 minutes and cool 1 minute before removing from pan.
