Crispy Potato and Carrot Casserole

Ingredients
- 6 potatoes, grated
- 3 carrots, grated
- 1 onion, grated
- 1 cup skim milk powder
- 1⁄4 cup rolled oats
- 2 eggs
- 3 tablespoons oil
- 1 teaspoon garlic powder
- 1 teaspoon salt
- 1 teaspoon pepper
- 1 cup cheese, grated
Directions
- Mix grated potatoes, carrots and onions in a large bowl.
- Stir in skim milk powder, oats, eggs, oil, garlic powder, salt and pepper.
- Heat oven to 350°F.
- Lightly grease a 13x9 pan.
- Spread mixture evenly into the pan.
- Bake about 30-40 minutes or until potatoes are done.
- Sprinkle with cheese.
- Return to oven for a few minutes to melt cheese.6.
