Crispy Jicama Salad

Ingredients
- 4 cups jicama, diced
- 2 large carrots, peeled and cut into strips
- 1 red bell pepper, cut into strips
- 1 small sweet onion, thinly sliced
- 2 tablespoons cilantro, finely chopped
- 6 tablespoons vegetable broth
- 4 tablespoons seasoned rice vinegar
- 2 tablespoons lime juice
- 2 teaspoons stone ground mustard
- 1⁄4 teaspoon salt
- 1⁄2 teaspoon crushed red pepper flakes
Directions
- In a salad bowl, combine the jimaca, carrot, bell pepper, onion, and cilantro and toss to mix.
- In a separate bowl, combine the remaining ingredients. Pour over the vegetables and toss to mix place into refrigerator for two hours.
