Crispy French-fried Mushrooms

  1. Thoroughly mix flour, salt, baking powder and pepper.
  2. Beat egg yolk and milk together.
  3. Blend in the dry ingredients.
  4. Beat egg white until foamy, add sugar and beat until stiff but not dry.
  5. Fold into milk mixture.
  6. Dip mushrooms in batter.
  7. Drain.
  8. Roll in Chex cereal crumbs.
  9. Drop in a few at a time into deep, hot oil (385 degrees).
  10. Fry until golden brown, turning once.
