Crispy and Creamy Simply Potato Salad #5FIX

Ingredients
- 2 (16 ounce) bags Simply Potatoes Diced Potatoes with Onion
- 1⁄4 cup white vinegar
- 2 tablespoons sugar
- 1 cup mayonnaise
- 1⁄2 cup chopped roasted red pepper
Directions
- Bring 2 quarts canola oil to 360 degrees F. Fry the two bags of Simply Diced Potatoes with Onions till golden brown (5 minutes) Place on paper towel to drain. Place in bowl while hot and add vinegar, sugar, mayonnaise and peppers. Mix well and salt/pepper to taste.
