Crisp Cracker Coated Halibut

My family goes fishing every year at Neah Bay and this recipe is the result!

Serves: 6-8

Ingredients

  • 2 -3  lbs  halibut, cut into 2-3 inch long strips
  • 1 (10 ounce) box  wheat  thin crackers
  • 1 (4 ounce)  sleeve  Ritz crackers
  • 1 12 cups evaporated milk
  • 2  eggs, beaten
  • 12 cup flour
  • 12 teaspoon dill
  • 12 teaspoon  seafood seasoning
  • 14 teaspoon garlic granules
  •  salt and pepper
  •  oil, to deep fry

Directions

  1. Heat oil.
  2. Place both kinds of crackers in the blender and blend till fine crumbs set aside.
  3. Combine milk and eggs, mixing well, set aside.
  4. Blend crackers, flour, dill, garlic, salt, pepper, and seafood seasoning together.
  5. Dip halibut strips in egg mixture and then the cracker mixture.
  6. Deep fry till golden.
  7. Place in oven safe pan lined w/ paper towels and then place in 350° oven.
  8. Cook 5 minutes and serve.
