Crepes

This is an old family favorite. We would make these on weekends (when there is more time to cook). They are delicious rolled up with all sorts of jams. An old girlfriend's family is Norweigan and would put lemon juice and sugar on thiers. I hope you enjoy! Show more

  1. Sift flour and salt into big mixing bowl. Hold sieve up high to allow lots of air into the flour.
  2. Make a hollow in the flour and break eggs.
  3. Whisk them, drawing in only some flour from the sides.
  4. Add melted butter.
  5. Beat mixture, slowly brining in some flour, until it is smooth and just thick enough to coat a wooden spoon.
  6. Add water and milk a little at a time.
  7. Keep whisking and drawing in the flour until everything is mixed together.
  8. Melt a little butter in a frying pan on medium heat.
  9. Pour half a cup of batter into the frying pan and swirl around to coat bottom of pan.
  10. Flip crepe once it starts to bubble and cook evenly on both sides.
  11. Add your favorite topping and enjoy!
