Creole Tomato Sauce

Yields: 1 cup

Ingredients

  • 14 cup olive oil
  • 1  onion, finely chopped
  • 1  large tomatoes, peeled, seeded, and chopped
  • 1  fresh  hot pepper, seeded and minced
  • 1  tablespoon vinegar
  •  salt and pepper, to taste

Directions

  1. Heat the oil in the skillet, add the onion, and saute until soft.
  2. Add the tomato, hot pepper and salt and pepper to taste.
  3. Stir until the sauce combines and is think.
  4. Stir in the vinegar and cook for another 2 minutes.
  5. Serve warm or cold with meat or fish.
