Ingredients
- 1 lb fresh okra
- 1⁄2 cup onion, chopped
- 2 tablespoons shortening
- 1 (12 ounce) package smoked sausage
- 1 teaspoon salt
- 1 (10 ounce) can Rotel Tomatoes
- 2 cups rice, cooked
Directions
- Wash and slice okra.
- Fry okra and onion in hot shortening until okra is no longer slimy( about 15 min ).
- Cut sausage into 1/2 " slices and add with salt and tomatoes.
- Cover and simmer 20 minute.
- Serve over rice.
