Creole Chicken With Long Grain Brown Rice

Ingredients
- 1 tablespoon olive oil
- 2 chicken breasts, sliced up
- 24 ounces chopped tomatoes
- 1 cup chicken broth
- 1 green pepper
- 2 onions
- 3 garlic cloves
- 1 teaspoon cumin
- 1 teaspoon coriander
- 1 tablespoon chili powder
- 1 teaspoon oregano
- 2 teaspoons creole seasoning
- 10 saffron threads
- 2 cups long grain brown rice
- 3 1⁄2 cups chicken broth
Directions
- Saute onions, garlic, and green pepper.
- Add sliced up chicken.
- Add tomatoes.
- Add chicken broth and spices.
- Simmer until liquid is reduced.
- While simmering, prepare rice using a pressure cooker.
- Recommend 2 c rice to 3.5 cups chicken broth.
