Creole Chicken

Ingredients
- 1 1⁄2 lbs chicken, cut into 1" cubes
- salt
- 1⁄4 teaspoon pepper
- 1 teaspoon vegetable oil
- 1 cup finely chopped onion
- 1⁄2 cup sliced celery
- 1⁄2 cup diced green pepper
- 2 cloves garlic, minced
- 1 (14 1/2ounce) can tomatoes, cut up
- 1⁄2 water
- 1 teaspoon water
- 1 1⁄2 teaspoons paprika
- 1⁄8 teaspoon cayenne pepper
- 1 bay leaf
- 2 teaspoons cornstarch
- 3 cups hot cooked rice
Directions
- Salt and pepper the chicken.
- In a large skillet over medium heat, brown chicken in oil; remove and set aside.
- In the same skillet, saute the onion, celery, green pepper, and garlic until tender.
- Stir in tomatoes, 1/2 c water, paprika, cayenne pepper, bay leaf and a little salt; bring to a boil.
- Reduce heat; cover and simmer for 10 minutes.
- Add chicken.
- Combine cornstarch and remaining water until smooth; stir into chicken mixture and bring to a boil.
- Simmer uncovered for 10-15 minutes.
- Discard bay leaf.
- Serve over rice.
