Creole Candied Yams

Ingredients
- 1 (30 ounce) can whole yams
- 1 lemon, juice of
- 1 teaspoon cinnamon
- 1⁄2 cup dark brown sugar
- 2 tablespoons butter, plus
- 1 tablespoon butter
- 1⁄4 cup seedless raisin
- 1 apple, cored and sliced
- 2 peaches, peeled and sliced
Directions
- Preheat oven to 400 degrees.
- Place yams in a casserole dish, pouring the liquid into a bowl.
- Add the lemon juice, cinnamon and sugars and mix until dissolved.
- Pour the mixture over the yams.
- In separate bowl, combine the raisins, apple and peaches.
- Add the yams.
- Dot with butter.
- Bake for about 45 minutes or until the syrup has thickened slightly and the yams look glazed.
